Apple Pie Baked Brie & Oaked Chardonnay
The perfect fall-inspired baked Brie recipe paired with a wine that is basically fall-in-a-bottle!

This recipe takes baked Brie to a whole new level. It’s basically apple pie, but with an entire wheel of brie baked into it. I KNOW RIGHT. What to pair?
I paired this delish baked Brie with a wine from Bonterra’s Single Vineyard Collection: ‘The Roost’ Single Vineyard Chardonnay. This stunning, high-quality, organically farmed Chardonnay is both fresh and rich, with vibrant flavors of lemon oil, sweet melon, juicy white peach, baked apples, warm baking spices, fried bananas, buttered toast... the list goes on! I absolutely love this wine and called it ‘fall in a bottle’ after the first sip.

Matching weight/texture: The wine’s rich and creamy mouthfeel matches the rich and creamy cheese.
Palate cleansing acidity: Even with it’s rich mouthfeel, this full-bodied wine has enough acidity to cleanse the palate between each cheesy, mouth-coating bite.
Matching flavours: The wine and the baked Brie share flavours of lemon, baked apple, and baking spices, which highlights these flavours in both the wine and the Brie!

Ingredients
Pie dough (I used the Pillsbury Pie Crust)
1 wheel of Brie
1 medium or 1/2 large Honey Crisp apple, diced
1/4 cup brown sugar
2 tbsp salted butter or margarine, melted
2 tbsp lemon juice (juice from 1/2 a lemon)
1/2 tsp cinnamon
1/4 tsp nutmeg
1 egg, beaten (for egg wash)
Directions
Preheat oven to 400 F.
Add diced apples, 1/4 cup brown sugar, 2 tbsp melted butter or margarine, 2 tbsp lemon juice, 1/2 tsp cinnamon, and a 1/4 tsp nutmeg to a small or medium mixing bowl. Mix to combine and set aside.
Unroll 1 sheet of pie dough and place Brie in the center. Score the top as pictured below.
Using a small, sharp knife or pizza cutter, cut the dough into a circle that’s approximately 3 inches larger than the Brie *NOTE: Since Brie wheels come in different sizes, you may want to measure for accuracy. Measure half the diameter of the Brie (from the outside to the center point). That’s how much bigger you’ll want the dough!
Top Brie with apple mixture and then wrap the dough around the Brie (as pictured below).
Transfer to a baking sheet sprayed with cooking oil and brush pie dough with egg wash. Bake at 400 F for 15-20 minutes, or until pie crust is golden brown and cooked through.
Enjoy immediately with crackers (or on it’s own) with a chilled bottle of Oaked Chardonnay!
