What to Pair?
I highly recommend pairing this beauty of a dip with the Single Vineyard 2020 ‘The Butler’ by Bonterra Organic Estates. This gorgeous red blend is from Mendocino, California and made from mostly Syrah, followed by Petite Syrah, and smaller amounts of Mourvedres, Grenache, and Viognier. It’s beautifully bold and such high quality with smooth, tight tannins and nice refreshing acidity. It has lovely ripe flavours of plum, black cherry, and blackberry with some burnt cedar, warming baking spices, black pepper, earthy mushroom, cocoa, fresh sage, dried rosemary - the list goes on! It would make for an amazing gift for that special wine lover in your life since it could age for years to come, OR is absolutely wonderful now for holiday parties.
Why does this pairing work?
This wine’s bold flavours and smooth texture play so well with the dip’s sweet, savoury, and creamy layers. Here’s why:
Fruitiness Meets Sweetness
Syrah has juicy dark fruit flavours like blackberry and plum, and these fruity vibes perfectly match the sweet fruitiness from the date jam.The Tannins, the Fat, and the Saltiness
The fat and salt from the rich Gorgonzola and mascarpone, along with the fatty and salty bacon, are RICH, but the wine’s tannins and refreshing acidity work together to cut through and balance out that richness.Acidity vs. Richness
The wine’s acidity keeps everything from feeling too heavy. It brightens up the creamy dip and bacon while highlighting all the sweet and savoury flavours.Matching Smokiness
The wine’s smokiness and the crispy, smoky bacon are a perfect match and bring out the best in each other.Herbaceous Match
The rosemary in the candied walnuts and the fresh basil topping match the wine’s herbal notes.
This pairing is all about balance—every bite and sip brings out the best in both the wine and the dip, making it a total crowd-pleaser!
