Blood Orange Burrata Salami Plate
Ingredients
For the sweet and spicy candied cashews
1 tbsp olive oil
1/2 cup cashews
1/4 cup honey
1/2 tsp cayenne pepper
Flaky salt
For the platter
2 balls of Burrata
15-20 round slices of salami (approx. 5 per salami rose)
1 blood orange, thinly sliced and halved (*keep the rind on half, remove the rind from the other half)
2-3 strawberries, sliced
5-7 blackberries
Fresh basil
Cayenne honey candied cashews
Hot honey drizzle
Olive oil drizzle
Flaky salt
Directions
Make sweet and spicy candied cashews: Roughly chop cashews. Heat olive oil in a small pan, then add cashews. Toast for 2-3 minutes, then add honey, cayenne, and flaky salt. Reduce heat to low and stir continuously until mixture is fully combined and thickened. Remove from heat and pour mixture onto a sheet of parchment paper. Allow to cool completely and then break/cut into small chunks.
Create 3-4 salami roses (here’s a process you can follow!)
Prepare platter:
Break apart 1 ball of burrata and place in 5-6 dollops on the plate.
Add salami roses on the plate around the burrata, followed by the strawberries, blackberries, and orange slice halves (without the rind). Break apart the second burrata and start filling in the gaps.
Top with sweet and spicy candied cashews and fresh basil ribbons, then finish with a drizzle of hot honey, olive oil, and some flaky salt.
Place the orange slice halves with the rind around the outside of the plate (this will make the plate look like a flower! :)
Serve with soft bread, crackers, and a Lillet Spritz (or two)!
Let me know what you think!! Love you all! xx Steph
