Instructions
Prepare baking sheet by lining it with parchment paper and pre-heat the oven to 400 F. Line up RITZ crackers on the baking sheet.
Brush each cracker with a thin layer of hot honey, then top each one with a 1/2 tsp of sour cherry spread. (see notes to adjust sweetness)
Using a sharp knife, slice each mini brie in half to create two thin rounds. Place each round on a cracker rind side down.

Bake at 400 F for 5 to 10 minutes, or until they’re melty but keep their shape. NOTE: 8 minutes was perfect in my oven, but watch them closely so they don’t spill over.
Remove from the oven and sprinkle the tops of each bite with a thin layer of sugar, then torch them for that awesome brûlée’d top! (as pictured below)
Transfer bites to your serving dish of choice, shaking off excess sugar as you do.
Drizzle with hot honey, top each bite with a pinch of flaky salt, and serve immediately!
Notes
These bites are best hot! If you’re making them for your guests, wait until they’ve arrived to bake, torch, and add the finishing touches. Everyone loves a good torching, so it’ll be great entertainment!
If you’re transporting these to an event or making them in advance, prepare them for baking (steps 1-4), then bake and torch them on-site!
These bites end up being sweet and salty with a little kick from the hot honey. If you’d prefer to keep them on the saltier side, you can either skip brushing the crackers with honey, or skip the sour cherry spread! You can skip both, but I would suggest adding a little dab of honey or spread to keep the brie stuck to the cracker.
Feel free to switch up the preserve — these would be awesome with fig jam, cranberry sauce, or apple butter!
