Burrata Pesto Focaccia Sandwich & Vermentino

This over-the-top, rich, saucy sandwhich is everything you would expect it to be and more. With layers of salty pesto and prosciutto, tangy tomatoes and creamy burrata, it's a decadent flavour explosion that is perfectly paired with a refreshing and palate cleansing chilled glass of Vermentino!
Vermentino a crisp and refreshing white wine that is the perfect match for this sammy. Its zesty acidity and citrusy notes cut through the richness of the sandwich, its bright flavors complement the fragrant garlic butter, and it's herbal undertones works perfectly with the pesto mayo. The contrast between wine’s acidity, creamy Burrata, and salty prosciutto is seriously to die for!
Instructions
Fresh herb and garlic focaccia
1/4 cup (4 tbsp) garlic butter
1/4 cup mayonnaise
2 tbsp pesto
Chopped cherry tomatoes
1-2 tsp extra virgin olive oil
1/2 cup Chopped roasted red bell peppers in oil
100g (approximately 5 slices) Prosciutto
1 ball of burrata
Salt and pepper
Directions
Set oven to broil. Cut focaccia in half lengthwise, spread garlic butter on both halves, and then broil for 2-4 minutes until toasted.
Mix together mayonnaise and pesto to make pesto mayo and spread a generous amount on each half.
Mix together chopped cherry tomatoes, olive oil, and salt and pepper and then add to one half of the sandwich. On the same side, add chopped roasted bell peppers, prosciutto, and Burrata.
Season Burrata with salt and pepper and then press both halves together. Cut sandwich in half and enjoy!
