Yes — this dip is basically just Caesar dressing. BUT it’s a freaking awesome one!! I kept it thin and didn’t mess with it much (since why mess with a good thing), but the real fun here is with the RADICCHIO! When raw, it’s super bitter and spicy on its own, but as soon as you dip it in this zesty, creamy, umami-rich dip, everything changes. The leaves start to taste a bit sweet, and the crunchy texture in contrast to the creamy dip is soooo freaking good. And then the wine comes in and takes it to a whole new level!!!

PLUS, we can’t ignore the beauty that is this dip. With the radicchio leaves, it looks like a stunning, blooming purple flower. And I love it so much.

Pair it with: Light Rosé

Light, crisp, fruit-forward — basically the perfect contrast to such a creamy, salty, savoury, umami-packed dip!! And even more so if you go with radicchio as a dipper (which I highly, highly recommend).

Radicchio is BITTER, and spicy, and a little crazy. And when your food is bitter, your best bet is a wine with low tannins (since tannins = bitter, and bitter + bitter = more bitter) and high acidity, since acidity can lower the perception of bitterness, making it taste almost sweet. A crisp rosé checks both boxes!! As long as it’s on the lighter side (darker means more tannins).

My pick: Podere 414 ‘Flower Power’ Rosato, IGT Toscana

A dry, crisp, light-to-medium bodied Tuscan rose made from 100% Sangiovese with flavours of strawberry, citrus, apricot, and subtle floral notes. Such a lovely, easy-drinking, patio-perfect kinda wine!! And I love how it’s called Flower Power. Perfect with my flower-inspired dip art 😊

Here’s a link to purchase this one if you’re in Canada, and here’s a list of stores in Alberta that might have it! And no worries if you can’t find this one, any light, fruit-forward rosé (like one from Provence) will do!

Here are some alternative wine pairings that would also be wonderful with this dip:

  • Prosecco, sparkling Riesling, or any sparkling rosé

  • Most crisp, light, salty, citrusy whites (my top picks: Vermentino or Vinho Verde)

If you prefer a cocktail, go for a Bees Knees! The acidity + lemon/honey flavours will work to contrast the salt/savoury/creamy dip (similar to the wine), and the herbal botanicals from the gin will work well with the radicchio!
