If I was stranded on a deserted island and I could only have one dip with me, it would be this one. Is it the smartest thing to choose a spicy dip when I’m probably deprived of water? Maybe. But this is my story. And in my story the dip comes with a perfectly chilled bottle of wine to balance out the heat.

The easiest, most delicious chip dip of all time

I’ve been meaning to make this one for a while, and I’m so excited that I’m finally sharing it with you! I tried this recipe out one night when I had no clue what to make myself for dinner (the hubs was out of town, sooo dip dinner). I was craving these Burmese Chili Bits and had a chilled bottle of Riesling in the fridge, so of course I whipped up a chili crisp dip with a side of Riesling for dinner! It was SO good - the combination of the creamy base with the crunchy texture of the chili bits was insane! BUT I will say it was a little on the aggressively spicy side. So, the next time I made it, I threw in some salty parmesan to balance it out a bit more and added a touch of honey, and it was perfect.

WARNING: It’s not not spicy!

The chili garlic sauce alone brings in a lot of heat, and the addition of the Chili Bits takes it up so many notches. But the beauty of this one is that spice is toned down by the creamy, high-fat base (sour cream and mayo) and the touch of honey, so in the end it all works so nicely together. And it’s even better with the right wine pairing!

The PERFECT wine pairing for chili crisp ANYTHING

Off-dry Riesling! One of my favourite dip wines. I specifically keep coming back to this one for spicy dips, and here’s why:

  • Chili spice + alcohol can set your mouth on fire, so a lower alcohol wine is key when chili spice is the main attraction!

  • Off-dry means a ‘hint of sweet’, which is so helpful here! The sweet tempers that spice a bit to keep you coming back for more (and more) bites.

  • Dip is creeeeaamy, and Riesling has enough of that crisp acidity to refresh your palate between bites!

  • There’s a whole lot of flavour going on in this dip, so it can easily overpower a light white wine. Riesling is aromatic and fulll of flavour itself, so the two work together rather than one completely overpowering the other!

Try these ones!

  • Selbach-Oster Riesling: This is the one I paired it with! I specifically had the classic Riesling (with the fish label), but that one doesn’t seem as widely available. This link will bring you to their Feinherb Riesling, which is also pretty good! But if you’re willing to spend a bit more, their Trutta Fario Kabinett Riesling is fantastic.

  • Weingut Nik Weis St. Urbans-Hof Estate Riesling: Absolutely love this one! Such great value and the perfect amount sweetness for this dip!

  • Loosen Bros ‘Dr. L’ Riesling: Super widely available, affordable, and always delicious.

  • 1 cup full fat sour cream

  • 1/3 cup mayonnaise
