Whipped Avocado Dip with Fresh Salsa & Txakoli
This easy, creamy whipped avocado dip is equally stunning and delicious. Perfect for game day, girls night, or taco tuesday!

I’m in Mexico and absolutely loving all the Mexican flavours, so I’m re-sharing this fresh and tasty creation that I posted early last year: A simple, flavour-packed twist on classic guacamole with a stunning wine pairing! Smooth and creamy whipped avocado dip, topped with fresh salsa, and paired with Txakoli.
The Wine Pairing
Txakoli (pronounced: chock-oh-lee) is a *usually* white wine style of wine from Spanish Basque Country in Northern Spain. It’s can be made from a few different grapes, but most commonly from one with the coolest name: Hondarrabi Zuri.
Txakoli is light and bone-dry with bright acidity and a hint of fizziness. It has some saltiness from its proximity to the ocean, vibrant flavours of zesty citrus, juicy white peach, and fresh flowers, and stunning minerality on the finish. If you’re into Vinho Verde or Albariño, you’ll love this one!
As the go-to ‘pintxo’ wine in Basque Country (think San-Sebastián, Spain), the pairing options are endless for this wine style, and this creamy avocado dip is a perfect example. It has the crisp acidity to cleanse the palate between each creamy bite, is bright and fresh enough to complement (and not overpower) the dip, and it has that hint of salinity and crisp acidity to make the beautifully fresh flavours in the salsa pop!

Recipe: Whipped Avocado Dip with Fresh Salsa
Servings: 2-4
Prep time: 10 minutes
Ingredients
Whipped Avocado Base
2 large, ripe avocados
1/4 cup full fat sour cream
1 large clove garlic, grated or pressed
Juice from 1/2 a lime
Salt and pepper to taste
Fresh Salsa Topping
10-12 sweet grape tomatoes, finely chopped
1/4-1/2 small red onion, finely chopped*
1/4 yellow bell pepper, finely chopped
1/4 cup cilantro, finely chopped
Juice from 1/2 a lime
Optional: 1/2 small jalapeño, finely chopped
1-2 tsp extra virgin olive oil
Salt and pepper to taste
Directions
Add avocado, sour cream, garlic, lime juice, and salt & pepper to a medium bowl. Whip by hand or with a hand-blender until smooth and creamy.
Add all salsa ingredients to a bowl and mix to combine. Taste and adjust with salt & pepper.
Transfer whipped avocado base to your favourite dip dish and top with fresh salsa. Finish it off with a drizzle of olive oil and some flaked sea salt, and serve with salted tortilla chips!
Notes
Avoid over mixing the avocado base since it can get a bit gummy when over-mixed.
If adding jalapeños, you can adjust the spice level by including more or less of the seeds.
If you prefer, you can mix the toppings into the whipped avocado dip for more of a classic guacamole texture!
