Wine Pairing
I recommend pairing this magical dip with an off-dry German Riesling! If you’ve been following for a bit, I’m sure you just said the word ‘shocker’ under your breath. Yes - I LOVE German Riesling, and when it comes to spicy food it will pretty much always be my first choice! Especially one with a hint (or more) of sweetness. That hint of sweet balances the spice from the hot buffalo sauce, it's bright acidity cuts through the rich, creamy, cheesy layers, and it's lower alcohol (less than 11% ABV), won't amp up the chili heat! On top of all that, the bright and refreshing fruit flavours of the Riesling contrasts the savoury flavours in the dip, creating a perfectly balanced flavour experience.
My Recommendation
I recommend the Nik Weis St. Urbans Hof Estate Riesling. Pairing Alternatives
If you’re looking for another wine that’s going to give you a similar pairing experience to an off-dry Riesling, try an off-dry Chenin Blanc (like a Vouvray from the Loire Valley in France or one from South Africa), or an off-dry Pinot Gris from Germany or Alsace, France. Off-dry Gewürztraminer would also be a fun option, but it tends to have higher alcohol which can really amp up the spice!
If you’re looking for a different style of wine pairing, try a sparkling wine like Sekt, Prosecco or Cava, an orange wine, or a bold, dry rosé from Tavel, France. If you’re only here for the red wine, I would suggest a Lambrusco (sparkling red) or a juicy Pinot Noir from the Willamette Valley! But just note that red definitely won’t work as well as the other options.
If wine isn’t your thing, you could also pair it with a Hefeweizen, Hazy Pale Ale, French 75, or even Sparkling or Cloudy Sake!
If alcohol isn’t your thing, go for a dealcoholized Riesling or Sparkling wine, a non-alcoholic alternative of the beers of cocktails listed above, or a crisp refreshing glass of sweetened iced tea!
