Speaking of football puns, I have an eBook called ‘Here for the DIP!’ that’s absolutely full of ‘em! Just take it from Justin:

Wine Pairing
Pair this delish dip with a Riesling Sekt from Germany or Austria! A crisp, zesty, and luscious sparkling wine with dominant flavours of lime, green apple, honey, flowers, and hints of fresh baked bread. This wine style is made is made in the same way as Champagne, but has a totally different flavour profile since it uses Riesling instead of the classic Pinot Noir/Chardonnay/Pinot Meunier.
Why does it work?
Riesling Sekt has crisp acidity and those palate cleansing bubbles to cut through the creamy richness of the dip, and the bright fruit and sweet honey flavours balance out the smoky bacon and spice from the jalapeños. Sekt also tends to have a hint of sweetness, which can help temper the spice, and low enough alcohol so it doesn't set your mouth on fire!
My Recommendation
I paired this dip with an incredible Riesling Sekt from one of my favourite producers: the Andreas Bender Riesling Sekt. This crisp bubbly has all the vibrant flavours of bright green apple, zesty lime, and sweet, floral honeysuckle, all wrapped up in fine, creamy, refreshing bubbles. It has the perfect balance of acidity and subtle sweetness to pair with this dip, and is also completely crushable on its own!
Alternative Pairings
For other similar wine styles, go for a sparkling Vouvray (Chenin Blanc) or Prosecco. If you’re looking for a different wine style that would also pair well with this dip, try a crisp and herbal Rosé from Provence, a bold Rosé from Tavel, France, a crisp wine with some sweetness like an off-dry Riesling, or a dry (not sweet) white like a Spanish Albarino or Italian Soave! If you’d rather a red, go for a fruit forward, dry or off-dry sparkling red, like a Lambrusco.
If wine isn’t your thing, pair this dip with a German Witbier, Classic or Spicy Margarita, or a citrus Kombucha.
