This intensely peppery, zesty, mouth-watering dip is a flavour experience no one will ever forget! It's an absolute blitz of bold flavours that gets better and better with every bite. Yes, that was a football reference. And no, I have no idea what a blitz is. But you should probably prepare yourself for more corny football puns over the next 20 days!

Wine Pairing

Pair this pepper-bomb of a dip with none other than Grüner Veltliner - A light, crisp, peppery, lime-forward white wine style from Austria that works a little too perfectly with this Dip. The lime in the dip matches the wine's zesty lime flavour, while the cracked pepper highlights Grüner Veltliner’s characteristic peppery kick. The saltiness from the Cotija cheese and the acidity from the wine also balance each other out perfectly while amping up the flavours from both the wine and the dip! Because fun fact: Salt and acid work to enhance flavours and make both the food and wine better!

My Recommendation

I recommend the Domäne Wachau Grüner Veltliner - a fantastic, crisp, zesty Gruner with vibrant notes of green apple, lime, and white pepper, and a subtle herbal edge. The absolute perfect pairing for this dip! If this one isn’t available to you, here are a couple more great options:

  • Markus Huber Vision Organic Gruner Veltliner

  • Heidler Loss Gruner Veltliner

Pairing Alternatives

If you’re looking for another wine that’s going to give you a similar pairing experience, try a Sauvignon Blanc, Vermentino, Albarino, or Picpoul de Pinet. If you’re looking for a different style of wine pairing, try a sparkling wine like Sekt, Prosecco or Cava, a lush and vibrant Viognier or Chenin Blanc, or a dry Rosé (especially one from Tavel or Provence). For a red wine, go for a Beaujolais from France, since it’s light and crisp enough to not overpower the dip and has some of those black pepper notes!

If wine isn’t your thing, you could also pair it with:

  • A Kölsch, Citrus-forward IPA or Pale Ale if you’re a beer lover

  • A Cucumber Mint Mojito, Paloma with fresh lime juice, or a classic Margarita if you’re feelin’ a cocktail,

  • Or if alcohol isn’t your thing, go for a dealcoholized Sparkling wine, a non-alcoholic lager (like a Corona Sunbrew - SO GOOD), sparkling limeade, cucumber-mint agua fresca, or club soda with a twist of lime!
