My friends, I am so incredibly proud of this recipe and pairing. After testing and filming and eating a ridiculous amount of cheesy dips for my 20 Days of Game Day Dips series, I was seriously craving 2 things.

The first was getting back to actually cooking. Dip is obviously amazing, but it doesn’t always challenge me in the cooking department. That’s why this recipe makes me so happy. I experimented with these melting potatoes, and after a couple attempts I was so proud of the outcome (and I know you’ll love them too!). The second thing I’ve been craving? Talking about wine. Wine took a back seat in my game day series. It’s been a while since I’ve done a deep dive into a specific wine, and that makes me sad! Wine education is what started this whole thing, so once I finished up my last series I told myself I wanted to get back to my roots and really talk about wine. And that’s exactly what I’m doing.

I recently picked up a ridiculous amount of wine from Costco Liquor, and when I shared this to my stories on instagram there was a clear interest in Costco wine content, specifically wine reviews (what’s worth it and what’s not), and a Costco Wine Guide! I love the idea of creating a wine guide, but I want to do it justice and not rush it. So while I work away at tasting through my Costco wine haul, I’ll share my reviews and pairing creations here to tide you over until it’s ready! And no promises on this coming anytime soon. I’m a full-time mom for another 6 months minimum so time is limited!! :)


The Wine Pairing

I paired this recipe with the 2022 Kirkland Signature Chablis Premier Cru, a Costco-exclusive wine that is without question one of my favourites from the Kirkland Signature line, and one I plan to stock up on! At around $20 USD ($30 CAD), the value is INSANE and absolutely worth trying, especially if you’re new this wine style! It’s much easier to spend $20-30 on a bottle of wine you’re not familiar with versus $40-60, which is a much more common price-tag for a Chablis Premier Cru.

This wine is beautifully fresh and crisp, with a touch of creaminess and roundness that IMO takes it to a whole new level of awesome. It starts off with vibrant flavours of lemon, green apple, pear, and pineapple, and finishes off with a hint of white flowers, that signature chalkiness, and that salty, ‘crushed seashell’ minerality that made me fall in love with this wine style.

Now, let’s talk about why this wine is so perfect with these buttery melting potatoes and ultra creamy garlic whipped feta. The wine’s acidity cuts right through the richness of the potatoes and feta, keeping each bite from feeling too heavy. The bright citrus flavours in the wine bring out the tangy brightness in the feta, and the saltiness from the dish tempers some of the wine’s acidity, accentuates it’s sweet fruit flavours, and matches the wine’s saltiness! This pairing is just the perfect balance of complimentary flavours and textures - crisp meets creamy, bright meets buttery, fruity meets savoury, and every sip leaves you craving another bite!

If Costco wine isn’t available to you, here are some other Chablis and Chablis Premier Cru options:

  • Chablis

    • Domaine Passy le Clou Chablis

    • Louis Jadot Chablis

    • Simonnet Febvre Chablis

  • Chablis Premier Cru

    • Henri Costal Chablis Premier Cru

    • Brocard Vau de Vey Chablis Premier Cru

If you’re looking for alternative wine pairings, here are some other styles that would work wonderfully with this dish!

  • Sancerre - Sancerre is Sauvignon Blanc from the Loire Valley in France. It’s a dry, crisp white wine that shares similar crushed seashell vibes to Chablis because of the super cool Kimmeridgean soil that’s found in both regions.

  • Albariño or Soave - Both styles share a similar crispness, salinity, and fresh fruit flavours with Chablis, plus they both tend to be closer to medium bodied (as is the Kirkland Chablis) with a touch of creaminess.

  • Prosecco - Yes, Prosecco is sparkling (so a bit different from Chablis), but it’s crisp and fresh and would be a fantastic pairing for this dish!

Ingredients

Garlic Whipped Feta
  • 1/4 cup of 10% plain Greek yogurt

  • 1 cup full fat Ricotta cheese

  • 1/2 cup Feta cheese
