NOT Burrata with Hot Honey Raspberries & Sparkling Rosé
An easy and delicious sweet n' spicy Burrata dupe, just in time for spring!
NOT Burrata?
Yup. This looks and tastes like Burrata, but it’s not! It’s actually just fresh mozzarella topped with an easy homemade Stracciatella - AKA the creamy deliciousness inside Burrata that makes it so dang delicious. Of course you can also just use Burrata, but even living in a big city like Calgary, I’ve noticed it’s not always easy to find, and it can be pricey! This Burrata dupe is an awesome alternative that’s easier to come by, more affordable, and delicious. win win win.

This sparkling rosé from Tasmania, Australia was fantastic, and paired perfectly with this *not* Burrata! The matching flavours of raspberry and citrus were ON POINT and the contrast between the creamy cheese and crisp bubbles made it hard to stop eating! Seriously - I could have devoured this whole thing.
RECIPE: NOT Burrata with Hot Honey Raspberries
Servings: 4-6 (as a light appetizer)

Ingredients
Homemade Stracciatella / Burrata
2 balls of fresh mozzarella (ideally packed in water)
1/4-1/2 cup 18% cream
Hot Honey Raspberry Mixture
1 cup fresh raspberries
1 tablespoon of hot honey
2 teaspoons of fresh lemon juice
1-2 teaspoons orange zest
Sea salt to taste
Garnish
Whole fresh raspberries
More orange zest
A drizzle of hot honey
2 tbsp of fresh mint leaves, chopped
Flaked sea salt
Chili flakes (optional for extra heat)
Directions
Make Homemade Stracciatella
Place one of the mozzarella balls in a small-to-medium sized bowl and mash with a fork until it has a crumbly texture. Leave the other ball as is (ideally packed in water in the fridge) until ready to serve.
Add a 1/4 to 1/2 cup of 18% cream to the bowl of mashed mozzarella (or just enough cover the cheese). Mix gently, then cover and refrigerate for a minimum of 1 hour. *NOTE: Check the mixture after about 30 minutes and add more cream if needed to reach your desired texture. The exact amount you use will depend on how liquidy you want it and how large / moist the mozzarella is to begin with.
Make Hot Honey Raspberry Mixture
Set aside a few fresh raspberries for the garnish, then mash the remaining berries in a small bowl. Add hot honey, lemon juice, orange zest, and salt to taste. Mix well to combine and refrigerate until ready to serve.
Assemble “Burrata”
When ready to serve, slice the second ball of fresh mozzarella into 1/4-1/2 inch slices. *TIP: If serving this as an appetizer, plan for at least 1 mozzarella slice per person.
Top Mozzarella slices with homemade Stracciatella mixture, followed by the hot honey raspberries. Top with whole raspberries, more orange zest (for flavour and colour), a drizzle of hot honey, fresh mint, flaked sea salt, and chili flakes (if desired).
Serve with crackers or crusty sourdough, and ENJOY!
