SPICY Dill Pickle Dip & SPICY Sauvy B
My almost famous dill pickle dip and best pickle wine pairing, but make em' SPICY
Let’s talk about a wine trend that’s blowing up right now: Spicy Sauvignon Blanc, aka Spicy Sauvy B. People are dropping frozen jalapeño slices into their Sauvignon Blanc, and I am so here for it. Of course I had to try it and come up with the perfect dip pairing, which led to the creation of this delish SPICY dill pickle dip. Yup.
If you don’t like pickles and are asking yourself WHY in the world I’m posting so many pickle recipes, I see you! I had a totally different dip planned this week, but so many of you sent me this trend asking my opinion on it! So of course I had to act on it, and IMO there is no possible better dip pairing.
But I want to hear from you!
Is there a dip, snack, wine, or cocktail you’ve been dying to see? I just asked you in the chat, so let me know!
It’s tangy, it’s spicy, it’s oddly refreshing, and it’s giving a whole new meaning to “hot girl summer”. I posted a story on Instagram Monday to tease this one, and I was straight up shocked by how many of you assumed I would hate this trend. Do you even know me!? ;) I didn’t even have to try it to know I would love it. I’ve always been into spicy cocktails, and absolutely loved the spicy rosé trend that made its way around in 2023.
Don’t get me wrong, I totally agree that Sauvignon Blanc is great as is, but that doesn’t mean we can’t spice it up sometimes.
So yes: I loved it, and I paired it with this spicy version of my almost famous dill pickle dip. The result? fire. It’s the kind of snack that will keep you coming back for more - cool, creamy, herbal, salty, the perfect amount of spicy, and just straight up aDIPtive.
👀 Coming Soon: Spicy FROZY B!
If you’re into this whole Spicy Sauvy B moment, you’re going to love my Spicy FROZY B, which I’m sharing exclusively with my paid subscribers this Friday! It’s like frosé, but with Sauvignon Blanc, and SPICY! And my recipe will blow you away.
RECIPE: Spicy Dill Pickle Dip
Ingredients (makes about 2 cups):
1 cup full fat sour cream
8oz cream cheese, softened
1-2 cups dill pickles, chopped (I personally aim for 2 cups because I like a CHONKY dip)
1 large frozen jalapeño, grated (see notes)
2 tbsp pickle juice
Optional: 4-5 slices of pickled jalapeños + 1 tbsp pickled jalapeño brine (do this if you like all the spice)
1-2 tbsp fresh dill, finely chopped (reserve some for topping)
2 tsp dijon mustard
1/2 tsp black pepper
1/2 tsp garlic powder
Sea salt to taste (this isn’t totally necessary since pickles are already salty, so make sure you taste it before adding!)
Toppings:
Crushed spicy dill pickle chips
Extra chopped pickles
More shaved frozen jalapeño
Fresh dill sprigs
3 jalapeño slices
Instructions:
Set aside a pickle or two, 3 jalapeño slices (for a cute garnish) and some fresh dill for the topping, then combine the remaining dip ingredients in a mixing bowl. (NOTE: Leave a bit of the frozen jalapeño too so you can grate some on top of the dip).
Taste and adjust ingredients as desired (e.g., add some salt, more pickle juice, pickled jalapeños - whatever floats your boat!)
If you have time, cover and refrigerate the dip for an hour (or more) to let the flavours meld.
Serve with Spicy Dill Pickle Chips (highly recommend) and a big ol’ glass of spicy sauvy B, and ENJOY!
Notes
The frozen jalapeño trick is a game-changer. Not only does it make grating easier and make for a cute presentation, but it also seems to mellow the heat! At least temporarily. If you love the heat, don’t worry - it should get spicier as it sits!
If you want even more spice, add the optional pickled jalapeños, or even some chili oil or chili flakes.
