Strawberry Bruschetta Whipped Boursin & Crémant Rosé
Whipped cheese and bubbles. Can it get any better?
The actual words that came out of my mouth after trying this: “WHAT in the world did I just make.” Pure shock at how delicious it was. And combined with the perfect sparkling rosé, and fresh homemade sourdough?! TOO GOOD.
This was only my second attempt, and I did not expect it to be as, dare I say, freaking perfect as it was. Here’s a pic (you’re welcome):

The Wine
Cave de Lugny Crémant de Bourgogne Rosé. I love everything about this bottle of bubs and I know you will too! Fine bubbles, fresh red fruit and citrus with some toasty notes, aromas just bursting out of the glass. And the colour/label are stunning!! Strawberry Bruschetta Whipped Boursin
Ingredients
For the bruschetta
1/2 cup chopped strawberries
1/2 cup chopped sweet cherry tomatoes
1/4 chopped cucumber (1 mini cucumber)
1/4 cup chopped salted pistachios
1/4 cup freshly grated parm
1 tbsp fresh lemon juice
2 tbsp chopped fresh basil, chopped
Drizzle of extra virgin olive oil
Drizzle of balsamic reduction
Black pepper to taste
Flaky salt to taste
Optional: 1/2 tsp chili flakes
For the whipped Boursin
1 small wheel garlic and fresh herb Boursin cheese
1/2 cup full fat sour cream
Toppings
Drizzle of extra virgin olive oil
Drizzle of balsamic reduction
Drizzle of hot honey
More flaky salt and pepper
Fresh pam shavings
Full cherry tomatoes, basil leaves, and halved strawberries for garnish
Directions
Add all bruschetta ingredients to a mixing bowl and toss to combine. Taste and adjust ingredients as desired.
Let bruschetta sit in the bowl for at least 30 minutes for juices to separate.
Whip together Boursin cheese and sour cream. Spoon and spread whipped cheese into a flat bottomed serving bowl.
Using a slotted spoon to leave the liquid behind, spoon bruschetta onto the whipped cheese.
Add toppings of choice, and enjoy with fresh sourdough and a big ol’ chilled glass of sparkling rosé!
