Ingredients

  • 2 tbsp olive oil

  • 3-4 cups Crimini mushrooms, chopped

  • 1/2 medium red onion, chopped

  • 3-4 Garlic cloves, pressed

  • cream cheese

  • 1 tsp dried thyme

  • 1 tsp black pepper

  • 1 tsp sea salt

  • 1/4 tsp cayenne pepper

  • 1 cup (1 8oz block) cream cheese

  • Juice of half a lemon

  • 1 puff pastry sheet, defrosted but cold (keep in the fridge until you’re ready to use it)

  • 2-3 cups grated Gruyere cheese

  • 1 egg

  • 1 tbsp water

Directions

  1. Preheat oven to 400 degrees F.

  2. Heat a large skillet over medium-high heat. Add olive oil followed by garlic. Stir and cook for approximately 1 minute, and then add chopped mushrooms and onions.

  3. Cook mushrooms and onions until softened (approx 5-10 minutes), stirring regularly to prevent burning. Add dried thyme, salt, pepper, and cayenne pepper and stir to combine. Add cream cheese followed by lemon juice. Stir until the cream cheese is melted and well incorporate…
