Tomato Boursin Pie & Barbera D'Alba
An easy, deliciously decadent summer appetizer that will impress your guests everytime!

Ingredients
1 pre-made pie crust
8-10 sweet cherry tomatoes, thinly sliced into rounds
2 tbsp extra virgin olive oil
1/4-1/2 tsp sea salt
1 small wheel Herb n' Garlic Boursin cheese
1/2 cup smooth Ricotta cheese
2 tbsp fresh basil, chopped
2 cloves garlic, pressed
1 cup Mozzarella cheese, shredded
1/4 cup freshly grated Parmesan cheese
Freshly ground black pepper
Garnish/serving: Balsamic reduction, fresh basil
Directions
Preheat oven to recommended temperature on pie crust package and pre-bake pie crust as per package directions. Set aside and reduce oven temperature to 350 F.
Slice tomatoes and add to a small bowl with olive oil and sea salt. Toss to coat and set aside for approximately 10 minutes to help drain some of the liquid from the tomatoes.
In a medium mixing bowl, combine Boursin, Ricotta, fresh basil, garlic, and Mozzarella.
