Tomato Boursin Pie & Barbera D'Alba

Ingredients

  • 1 pre-made pie crust

  • 8-10 sweet cherry tomatoes, thinly sliced into rounds

  • 2 tbsp extra virgin olive oil

  • 1/4-1/2 tsp sea salt

  • 1 small wheel Herb n' Garlic Boursin cheese

  • 1/2 cup smooth Ricotta cheese

  • 2 tbsp fresh basil, chopped

  • 2 cloves garlic, pressed

  • 1 cup Mozzarella cheese, shredded

  • 1/4 cup freshly grated Parmesan cheese

  • Freshly ground black pepper

  • Garnish/serving: Balsamic reduction, fresh basil

Directions

  1. Preheat oven to recommended temperature on pie crust package and pre-bake pie crust as per package directions. Set aside and reduce oven temperature to 350 F.

  2. Slice tomatoes and add to a small bowl with olive oil and sea salt. Toss to coat and set aside for approximately 10 minutes to help drain some of the liquid from the tomatoes.

  3. In a medium mixing bowl, combine Boursin, Ricotta, fresh basil, garlic, and Mozzarella.
