You know how memory and smell are so linked? How smelling something so common can generate the most specific memories, and with them, allll the feels? Like how the smell of gingerbread will forever remind me of the fluttery excitement of setting up the christmas tree with my mum and sister. Or how waking up to the smell of percolating coffee will always be linked to cozy mornings on our family camping trips.

Well — it’s official. The smell of truffle oil and buttery mushrooms has officially locked in a new memory: My mouth watering as I’m making the topping for this dip, waiting for my guests to arrive. Eating a few spoonfuls as I do — because how could I not — and trying my hardest to leave enough for the dip.

From the food to the heartfelt chats and laughter, that entire night was filled with pure joy. So from now on, truffle = happiness. I mean let’s be real… it always has. But there’s a more concrete memory attached now ;)

The Dip: Truffle Parm Stuffed Mushroom Dip

This dip was without question a crowd-favourite at my recent dip dinner party. And for good reason. It’s basically a combination of my wildly loved hot truffle parm dip and my creamy hot mushroom dip — and it’s TOO good.

Picture this: Earthy, garlicky, buttery mushrooms, draped in the cheesiest silkiest parm-stuffed base, topped with crispy Panko, truffle butter sautéed mushrooms, and finished off with more parm + a drizzle of black truffle-infused olive oil.

Right!? The thought alone will make your mouth water, but just wait until you smell it. For real — it’s been weeks since I made this and I swear I can still smell those buttery truffle-y mushrooms.

The Wine Pairing: Gattinara Nebbiolo

Nebbiolo (the grape) is absolutely fascinating. And Nebbiolo as wine? Truly hard to beat. Especially if you’re into the whole earthy, layered, delicious red wine thing.
