I’m VERY proud of this one and need you to try it asap!! I’ve been planning to make an elote dip for a while now, but I really struggle with making dips that everyone makes. I wanted to make it unique, and when I had the idea of whipping the Cotija cheese (because you know I love me some whipped cheese), I knew I was onto something. I had no clue if it would actually work, but if it did? GENIUS. Spoiler: it worked!!!
The whipped cheese on its own is super salty, tangy, and creamy, so I balanced it out with sweetness, spice, and crunch. And holy guacamole, SHE GOOD!
I decided to go the cocktail route for this pairing for two reasons: One, it’s a Mexican-inspired dip, and with Mexican food I can’t help but want a margarita! And two, it’s July, which means it’s freaking hot out there, and I can’t seem to stop craving a good spritz. Soooo of course, I made a margarita-spritz hybrid! A Mango Mezcal Margarita Spritz. YUM
This dip is a wonderful combination of sweet, spicy, salty, smoky, and tangy, so I went with a sweet-salty-smoky-tangy pairing! I left out the spicy, since spicy food + spicy drinks can be a bit much. The sweetness comes from the mango juice, the saltiness from… the salt, the smokiness from the mezcal, and the tanginess from the lime.
