This creamy whipped feta with sweet, slow roasted, jammy tomatoes is one for the Super Bowl Snacks Hall of Fame. Even the actual football fans will be saying "I'm just here for the dip" once they try this one!

Wine Pairing
I paired this dip with a Verdicchio from the Marche region of Italy, and I highly recommend you do the same! Verdicchio is a dry white wine style that’s crisp, zesty, and a bit oily (in the best way).
Why does it work?
This Italian white wine has bright citrus and green apple flavours that mirror the lemon and basil in the dish, while its crisp acidity cuts through the rich cheese. Verdicchio’s subtle almond notes pair beautifully with the nuttiness of the pistachios, and its refreshing acidity enhances the roasted tomatoes’ natural sweetness while tempering the saltiness from the feta.
My Recommendation
I recommend the Pievalta Tre Ripe Verdicchio - a bright, zesty, almost creamy Verdicchio that’s bursting with flavours of lemon zest, green apple, and a hint of almond on the finish. This vibrant wine is deliciously refreshing and one I plan on stocking up on!
Alternative Pairings
If you’re looking for another wine that’s going to give you a similar pairing experience, try a Soave, Albarino, Vermentino!
If wine isn’t your thing, here are some alternative pairings:
For beer, try a Pilsner, Saison, or Wheat Beer
For cocktails, try an Aperol Spritz, Lemon Basil Gin Fizz, Negroni Sbagliato, or Tomatini.
For non-alcoholic options, go for a tomato juice spritzer or a sparkling water infused with lemon and herbs.
